Peanut Butter Pudding Parfait

3/4 cup sugar

1/4 cup cornstarch

3 cups milk

1/2 cup creamy peanut butter

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips

Combine sugar and cornstarch in a small saucepan. Slowly whisk in the milk. Bring to a boil over medium heat. Reduce heat and simmer for about 1.5-2 minutes or until it thickens. Whisk constantly to avoid burning. Remove from heat. Whisk in the peanut butter and vanilla extract until the pudding is smooth. Allow to cool slightly, about five minutes.

Assemble parfaits by putting about 1/4 cup of pudding mix in the bottom of a cup and sprinkling with chocolate chips. Repeat three more times to create four layers total.
