1 cup roasted Buttermilk-BrinedChicken diced
1 cup spinach fresh, chopped and tightly packed
1/2 cup Granny Smith apple coredand thinly sliced
1 Tbsp. olive oil
2 tsp. lemon juice
1/4 tsp. salt
1/4 tsp. ground black pepper
1/2 cup part-skim Ricotta cheese
2 whole-wheat pitas warmed andcut in half

Prep Time: 20 minutes. Combine chicken, spinach, apple, olive oil, lemon juice, salt, pepper and ricotta in a medium bowl. Mix well. Portion chicken mixture into warm pita bread halves. Yields: 2 servings.
