12 medium baking potatoes
1 package of cream cheese,
  softened
8 ounces sour cream
8 tablespoons butter
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
1 cup shredded cheddar cheese

Preheat oven to 350 degrees. Grease a 2-quart baking dish. Peel the potatoes and cut them into quarters. Place them in a saucepan and add enough water to completely cover them. Cook them over medium-high heat for 20-25 minutes or until soft then drain off the water. In a mixing bowl, combine the cooked potatoes, cream cheese, sour cream, butter, garlic powder and black pepper. Beat with a mixer until light and fluffy. Spoon mixture into the prepared baking dish. Top with shredded cheddar cheese. Cover the dish with foil and bake for 45 minutes at 350 degrees. Remove the foil then back for 15 minutes longer or until the cheese is bubbly. Serve hot.
