Cowboy caviar
From the kitchen of Kathy Willie of Detroit Lakes, Minnesota
2 cans Mexican corn
1 can RoTel diced tomatoes and green chilis
2 cups shredded cheddar cheese
6 green onions, chopped
1 cup mayonnaise
1 cup sour cream

Mix all together and refrigerate at least 1 hour. Serve with corn chips.
