Stuffed Potatoes

1/2 cup sour cream, or sour cream w/ chives
1/4 cup grated cheddar cheese
salt and pepper
Cut potatoes in half lengthwise, scooping out the potato. Save shell. Grate potato with a grater or food processor. Mix grated potato, sour cream and cheese together thoroughly. Season to taste with salt and pepper. Stuff potato shells with this mixture. Bake at 375 degrees for 35 minutes or until they are golden brown.[[In-content Ad]]
