Rhubarb Torte

1 cup of flour
1/2 cup butter
2 Tbsp. sugar
Filling:
2 1/4 cup rhubarb
1 1/4 cup sugar
5 Tbsp. flour
1/4 tsp. salt
5 egg yolks
2 cups milk
2 cups cream
Combine crust ingredients and press into a 8x10-inch pan. Bake at 325 degrees for 20 to 25 minutes. This crust may not be baked very hard. In a saucepan, combine filling ingredients; cook until thickened and pour into baked crust.
For the topping; Beat the egg whites, 1/4 tsp. cream of tarter, and 7 Tbsp. sugar. Spread over rhubarb mixture. Brown in oven for 10 to 15 minutes.[[In-content Ad]]
