Rhubarb Cookie

1 cup butter
1 1/2 cup brown sugar
2 eggs
3 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 1/2 cup finely cut rhubarb
3/4 cup coconut
Frosting:
3 oz. cream cheese
1 Tbsp. butter
3 tsp. vanilla
1 1/2 cup powdered sugar
Mix all the cookie ingredients together and bake at 350 degrees for 12-15 minutes or until light brown. Cool completely and frost cookies. Store the cookies in the refrigerator.[[In-content Ad]]
