Rhubarb Cherry Delight

Crust:

1 cup quick oatmeal

1 cup brown sugar

1/2 cup butter

1 cup flour

Pinch of salt

Combine and mix together. Press 1/2 of mixture in bottom of nine inch by 13-inch pan.

Filling:

4 cups diced rhubarb

1 cup sugar

1 cup water

2 tablespoons corn starch

1 teaspoon vanilla flavoring

1 large can of cherry pie filling

1/2 cup chopped walnuts

Spread rhubarb on crust. Boil sugar, water and corn starch until think. Add vanilla flavoring and pie filling. Spoon over rhubarb. Sprinkle with remaining oatmeal mixture and chopped walnuts on top.

Bake for 45 minutes at 350ยบ F. You may add sliced bananas and whipped cream or ice cream when serving this.[[In-content Ad]]
