Rhubarb Bread

Bread:
1 1/2 cups brown sugar
2/3 cup salad oil
1 egg
1 cup buttermilk or sour milk
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
2 1/2 cups flour
1 1/2 cups rhubarb, diced
1/2 cup nuts, chopped
Topping:
1/2 cup sugar
1 Tbsp. butter
1 tsp. cinnamon

Mix the bread ingredients together and pour into two greased 9x5 loaf pans. In a separate bowl, mix the topping ingredients with a fork or pastry cutter and sprinkle on top of the bread batter. Bake at 325 degrees for one hour.[[In-content Ad]]
