Ice Cream Cake

Recipes submitted by Sandy Meier, Perham, Minn.

Crust:
1 pound package Oreo cookies, crushed
1/2 cup butter, melted
Mix crushed cookies and butter together. Spread in a greased 9- by 13-inch pan. Set in refrigerator to cool.

Filling:
1 large can evaporated milk
2/3 cup chocolate chips
2/3 cup powdered sugar
1/2 cup butter
1 teaspoon vanilla
Bring filling ingredients to a boil. Cook for eight minutes until thickened, stirring often. Add vanilla after removing from heat.
While filling is cooling, spread one-half gallon of softened ice cream over crust. (I completely open a half-gallon square of ice cream, slice it and place it on crust.) Pour cooled filling over ice cream and freeze. Add one large carton cool whip over top.
You may decorate with jell icings and sprinkles for birthdays![[In-content Ad]]
