Easy Enchiladas

1 lb. cooked, shredded chicken or ground beef
2 cups shredded cheese
2 (10 oz.) cans green enchilada sauce
8 flour tortillas

Heat the oven to 375 degrees. Lightly spray a 9x13 pan with cooking spray. Mix the cooked chicken or ground beef, 3/4 cup enchilada sauce and 1 cup of shredded cheese in a bowl. Spoon about 3 tablespoons of the filling mixture onto tortillas; roll up and place the seam-side down in the baking dish. Pour the remaining sauce over the tortillas and sprinkle with remaining cheese. Bake for 20 to 25 minutes or until cheese is melted and filling is heated through.[[In-content Ad]]
