Cream Cheese Filled Cupcakes


Cupcake batter:
2 1/4 cups flour
1 1/2 cups sugar
1 1/2 tsp. soda
3/4 tsp. salt
1/3 cup baking cocoa
1 1/2 cups water
3/4 cup canola oil
1 1/2 tsp. vinegar
1 1/2 tsp. vanilla

Cupcake Filling:
1/2 cup sugar
pinch of salt
1 egg
1- 8 oz pkg. of cream cheese
1 cup of mini-chocolate chips

Mix batter and filling in separate bowls. Fill the paper lined cups half full of batter. Then add one heaping teaspoon of filling mixture into the center of each cupcake. Bake at 375 degrees for 20-25 minutes. Cool and frost. Makes 24 cupcakes.
