Chicken Wild Rice Soup

6 cups chicken stock
1 onion
3 cloves garlic, chopped
3 potatoes, chopped
Celery, chopped
Carrots, chopped
1 cup heavy whipping cream
4-8 oz. cream cheese
Salt and pepper to taste
3 chicken breasts
Boil the chicken breasts in the chicken stock with the chopped veggies for 15 to 20 minutes, remove the meat, add in the wild rice and cook until it's done. Chop the chicken and add it back into the soup, then add in the cream and cream cheese. Heat until it's all combined well. Top each bowl with scallions, and cheddar cheese.
