Cherry Cheesecake Salad

1 lb. fresh or frozen pitted sweet cherries
1 1/2 tsp. unflavored gelatin
1 package (8 oz.) softened cream cheese
1/2 cup powdered sugar
4 oz. white chocolate, melted
1 cup heavy whipping cream
2 tsp. vanilla

Chop cherries in a food processor, then pour into a sauce pan. Add gelatin. Let stand for one minute. Bring to a boil, then reduce heat. Cook and stir one minute until gelatin is dissolved. Pour into bowl and refrigerate for 45 minutes. In small mixing bowl, beat cream cheese until smooth. Add powdered sugar, chocolate and vanilla. Fold in cherry mixture. In another bowl, whip cream to form soft peaks. Fold into cherries. Pour into individual bowls. Refrigerate three hours or until set. Serves 10.
