Cheesy Chicken Casserole
1/2 cup butter
1 1/2 cups cooked chicken
2 (10 oz.) pkgs. frozen broccoli, cooked
1 1/2 cups rice, cooked
1 can (10.75 oz.) cream of mushroom soup, undiluted
1/2 lb. cheddar cheese, cubed
In a microwave safe bowl, cook broccoli according to package directions. In a saucepan, cook rice according to package directions. Meanwhile, in a kettle combine the onion, butter, chicken, soup, rice, broccoli and cheese. Simmer and stir occasionally until cheese is melted.
