Blueberry Muffins
From the kitchen of Lisa Artac in Greenwood, Wis.
2 cups flour
1 tsp. salt
3/4 cup milk
1/2 cup sugar
3/4 cup blueberries
1/2 cup vegetable oil
1 Tbsp. baking powder
Beat egg in bowl, stir in milk and oil, add thawed blueberries. Measure dry ingredients in a separate bowl, add all at once to the liquid ingredients. Stir just until the flour is moistened (batter will be lumpy). Line muffin tins with paper baking cups and fill about 2/3 full. Bake 20 minutes at 400 degrees.[[In-content Ad]]
