Banana Sour Cream Coffee Cake
1 cup sugar
2 eggs, beaten
1 tsp. vanilla
1/2 cup sour cream
1 cup mashed bananas
2 cups flour
1/4 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
Cream sugar and butter. Add remaining ingredients.
Sugar/Cinnamon mixture:
1/4 cup sugar
1 tsp. cinnamon
1/2 cup chopped nuts (optional)
Preheat oven to 350 degrees. Spread half the sugar/cinnamon mixture in the bottom of a well-greased bundt pan. Pour in 1/3 batter; add remaining sugar/cinnamon mixture. Do not let it get out to the edge of the batter. Pour the remaining batter on top. Bake 45 minutes. Cool 5-10 minutes on wire rack before removing the bundt pan.
