Submitted by: Mary Schroeder, Owatonna, Minn.
1 cup sugar
2 eggs
1 cup mashed bananas
1/2 tsp. vanilla
1/2 cup sour cream
2 cups sifted flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 cup finely chopped pecans or walnuts
1/4 cup sugar
1 tsp. cinnamon
Preheat oven to 350 degrees. In a bowl, cream the butter until light. Gradually beat in one cup of sugar. Beat in eggs one at a time. Add mashed bananas, vanilla and sour cream. Sift together flour, baking powder, baking soda and salt. Fold into the cream mixture, stirring just to blend. In a bowl combine chopped nuts, 1/4 cup sugar and cinnamon. Use as filling. Spoon half of the batter into well-greased and lightly floured tube pan. Sprinkle half the filling mix over top. Spoon the remaining batter into the pan and sprinkle with the remaining filling mix on top. Bake for 45 minutes or until done. Cool in pan on a wire rack for 10 minutes. Shake loose and completely cool.[[In-content Ad]]
