Baked Caramel Corn

2 bags microwave popcorn
1/2 cup butter
1 cup brown sugar
1/4 cup dark corn syrup
1/2 tsp. salt
1/4 tsp. baking soda
1 tsp. vanilla

Pop the microwave popcorn and pre-heat the oven to 250 degrees. Place the popped popcorn into a buttered roaster or two cake pans. Make sure to pick out the unpopped seeds. In a saucepan, melt the butter and then stir in the brown sugar, dark corn syrup and salt. Bring it to a boil for 5 minutes. Do not stir. Remove from heat and add the baking soda and vanilla. Pour the mixture over the popcorn and mix well. Put in the oven at 250 degrees for 30 minutes. Remove from the oven, stir well and let cool.[[In-content Ad]]
